Crock Pot BBQ Beef Stew

* 2 lbs. stew meat, chopped into bite sized pieces
* 3 tbsp. oil
* 1 cup onion, sliced
* 1/2 cup green pepper, chopped
* 1 lg. clove garlic
* 1/2 tsp. salt
* 1/8 tsp. black pepper
* 2 cup beef stock
* 1 can (8 oz.) tomatoes
* 1 can (4 oz.) mushrooms
* 1/3 cup barbecue sauce
* 3 tbsp. cornstarch
* 1/4 cup cold water




Directions
1. Place all ingredients except cornstarch and water in Crock Pot on low heat. Cook 8-10 hours or until meat is tender.
4. Mix cornstarch in cold water and add to crock pot the last 5 minutes of cooking to thicken before serving.
Serve over hot cooked rice.
