Zucchini Louisiana

Zucchini Louisiana


2 lbs. zucchini
1 green pepper, chopped
1 medium onion, chopped
1 clove garlic, minced
1 tsp. salt
1/2 tsp. black pepper
4 med. tomatoes, chopped
1 tbsp. butter
2 1/2 tbsp. chopped parsley

Put zucchini into the bottom of a crockpot. Top with the rest of the ingredients except parsley. Cover and cook on high for two hours. Serve with sprinkled parsley on top.
