BOB'S STUFFED FRENCH TOAST


 
4 (1 oz.) slices day old Italian bread
1/2 c. egg beaters
2 tbsp. vanilla, divided
1 med. banana
2 pkgs. Sweet and Low
Dash cinnamon
1/4 c. Ricotta cheese
Dash nutmeg
1 tbsp. coconut
 
Combine cheese, 1/2 banana, 1 tbsp. vanilla, nutmeg and sweet and low in blender and blend until smooth. Thinly slice remaining banana. Distribute banana slices over mixture and top with remaining bread. Combine eggs substitute, cinnamon, 1 tbsp. vanilla and dip each sandwich into this mixture. Grill each sandwich on both sides until golden brown. Serves 2.
