BREAKFAST BRUNCH CASSEROLE


 
1 lb. potatoes, cooked, peel & dice after cooled
1 lb. ham, diced
8 boiled eggs, diced
2 tbsp. parsley
2 tbsp. onion
1/2 lb. Cheddar cheese, diced
Mix together and pour over top:
1/4 c. butter, melted
1/4 c. flour
1 tsp. salt
1 1/2 c. sour cream
Bake at 375 degrees for 30-40 minutes. Delicious!
