BUFFET BREAKFAST CASSEROLE


 
butter
6 to 8 slices bread
2 lb. bulk sausages (Owens or Jimmy Dean)
1/2 c. chopped onion
1 tbsp. prepared mustard
2 c. shredded cheese (mild cheddar is good)
8 eggs
2 1/2 c. milk
1 tsp. salt
1/2 tsp. pepper
Butter bottom and sides of 9 x 13 inch pan. Line bottom of pan with bread. Brown sausage with onion. Break up this mixture with fork. Drain well. Stir in mustard and blend well. Spread over bread. Top with cheese. Beat eggs with milk, salt and pepper. Pour over all. Refrigerate overnight. Bake at 350 degrees for 60 minutes. Cut into squares and serve hot. Serves about 12.
