COLD CURRIED CHICKEN AND RICE SALAD


 
1/2 c. mayonnaise
1/2 c. Marzetti's slaw dressing
1/2 c. raisins
3 tbsp. mango chutney (do not omit)
2 tbsp. curry powder
1 tbsp. lemon juice
4 1/2 c. cubed cooked chicken
2 c. cooked rice
1/4 c. thinly sliced green onion
1 banana, sliced (optional)
1 apple, sliced (optional)
1/4 c. peanuts
1/4 c. coconut (do not omit)
 
Combine salad dressing, raisin chutney, curry powder and lemon juice. Puree in blender or food processor. Blend in chicken, rice, and onion and refrigerate for 1 hour (important for flavors to blend). Makes 4 servings.
