PECAN STUFFED FRENCH TOAST


 
4 oz. cream cheese
1 tsp. vanilla
2 tbsp. sugar
3 tbsp. pecans, coarsely chopped
1 loaf day old French bread, unsliced
3 eggs
1/4 c. milk
Butter flavored shortening
Cinnamon and/or nutmeg
 
Blend cream cheese, vanilla, nuts and 1 tablespoon sugar. Slice bread 1 1/2 inch. Slice a pocket in center of each. Spread approximately 1 tablespoon of cheese mixture in each pocket.Mix eggs, milk and other tablespoon of sugar. Dip the bread and let it soak in the mixture for a few minutes. Fry slices in a little shortening until both sides are golden brown. Sprinkle with cinnamon and/or nutmeg.
