Red Eye Gravy

For a unique variation, some cooks like to substitute cola for the coffee in this recipe, although it will no longer be authentic redeye gravy.
* 1 lb. paper-thin slices of country ham, cut in small pieces
* 2-3 tablespoons bacon drippings (you may substitute cooking oil)
* 1/2 cup strong coffee
* salt and pepper to taste
1. Heat bacon drippings in a skillet on medium heat. Add ham and fry until browned.
2. Add the coffee (or cola) and bring to a boil, stirring and scraping the bottom of the pan.
3. Simmer for 2-3 minutes until smooth.
4. Serve over the cooked ham, biscuits or grits.
Yield: 4 servings

Note: This is a thin gravy, similar to au jus. If you would like it thicker add 1 tblespoon cornstarch dissolved in 1/4 cup cold water in step 1, before adding the ham. Stir until mixture thickens, then add ham.
