Spicy Blackened Salmon with Blue Cheese Sauce

Do your sinuses need clearing? Do you need a nice kick in the pants after a long day at work? 
 Whip this tasty dish up in no time and
 enjoy the most tender and deliciously flavorful salmon of your life! 
Warning:  Not for lovers of bland!

1 tbl Italian seasoning
1 t cracked black pepper
2 tbl paprika
2 tbl salt
1/2 tbl cayenne pepper
2 tbl butter
1 tbl extra virgin olive oil
4 6 oz salmon filets

Preheat oven to 400 degrees F.
In a small bowl, combine the Italian seasoning, pepper, paprika, salt and cayenne.  Season each piece of salmon with seasoning, both sides.  I suggest not going overboard on this step!
Heat a large skillet over medium-high heat and add the butter and oil.  Once the butter has melted, add the fish and cook 2 minutes per side.
Transfer the entire pan to the oven and cook for another 4 to 6 minutes.
Top with blue cheese sauce and enjoy!

Blue Cheese Sauce:
1/4 c white wine
1/2 c heavy cream
3/4 c blue cheese crumbles

Place white wine in a medium saucepan and reduce by half.  Add the heavy cream and allow to reduce.  Add the blue cheese and whisk until smooth.  Sauce will take sometime to thicken, so I suggest making the sauce first.
