YELLOW SQUASH AND ZUCCHINI CASSEROLE

□   2 med. yellow squash
□   1 med. zucchini squash (both kinds diced)
□   1 med. onion, chopped
□   1 c. grated Cheddar cheese
□   2 tbsp. butter
□   1 1/2 c. lowfat milk
□   1 lg. egg, beaten
□   1 c. Minute rice
□   1 tsp. Italian seasoning
□   1/3 tsp. salt
□   1/2 tsp. black pepper



Combine all ingredients in large bowl; mix well. Pour into greased casserole baking dish. Bake at 375 degrees for 35 minutes, or until all liquid is absorbed. Garnish with parsley. 6 servings.
