Zucchini Bread

1 c. chopped walnuts
1 c. oil
2 c. shredded zucchini
1 tsp. vanilla
2 1/2 c. flour
1/2 tsp. salt
2 c. sugar
4 eggs
1 c. raisins
1 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda

In large bowl, beat eggs until smooth. Add sugar and oil. Beat well. Add zucchini, nuts and raisins. Add dry ingredients and mix well. Pour into greased and floured loaf pans. Bake at 350F. for 55 minutes.
