Red, White and Black Bean Casserole

2 T. olive oil
1 yellow & green bell pepper, cut into 1/2 inch strips
1/2 C. sliced green onions
1 (14 1/2 oz) chunky style salsa
1 (4 1/2oz) green chilies, drained
1 pkg.(1 1/2 oz) taco seasoning mix
2 T. chopped cilantro
1/2 tsp. salt
2 c. cooked white rice
1 (19oz)can. white cannelloni beans, rinsed and drained
1 (15 1/2oz) can. red kidney beans, rinsed and drained
1 (15 1/2oz) black beans, rinse and drained
1 C. (4oz) shredded Cheddar cheese, divided
1 pkg. flour tortillas ( 6 inches)

  preheat oven to 350 F. Spray 13 x 9 inch. baking dish with spray. Heat oil in large saucepan over medium-high heat. Cook and stir pepper and green onions about 5 minutes. Add salsa, chillies, taco seasoning, cilantro and salt; cook 5 minutes, stirring occasionally. Stir in rice and beans. Remove from heat; Stir in 1/2 cup cheese.
   Spoon mixture into prepared baking dish. Sprinkle remaining 1/2 cheese evenly over top.
Cover and Bake 30 to 40 minutes or until heated through.
Serve warm with tortillas.

Makes 6 servings.

Three Bean Casserole

1 (16oz) can. butter beans
1 (16oz) can. French style green beans
1 (16oz) can. English peas
1 tsp. salt
1/4 tsp. pepper
4 tbsp. oil

  Combine all ingredients in a large saucepan and cook a few minutes to season. Drain.

1 cup, mayonnaise
2 hard cooked eggs, shelled
1 tbsp. Worcestershire sauce
1 medium onion, grated
1 tbsp. salad dressing
Dash of Tabasco sauce
Crackers crumbs
1 (3oz) can. French Fried Onion Rings

Mix all ingredients together except cracker crumbs and onion rings. In a 9 x 13 inch casserole alternate layers of vegetables and sauce, ending with sauce. Bake at 350 F. for 30 minutes until sauce is bubbles. Cover with crackers crumbs and bake until brown. Top with onion rings.

8 to 10 servings.

Baked Beans

1 lb. ground chuck
1 medium onion, chopped 
1 (28oz)  can. pork and beans
1 tbsp. brown sugar
1 (8oz) can tomato sauce
1 tsp. mustard
1/2 lb. bacon 

Brown beef and onion together. Drain. Combine with beans, sugar, tomato sauce, mustard, and bacon.Pour into slow cooker. Cook on low for 6 to 8 hours or on high for 3 to 4 hours.

4 to 6 servings

Adele's Teriyaki Chicken Delight

Prep. Time: 10 minutes- Cook Time: 31 minutes

2 c. cooked white rice ( 3/4 uncooked)
2 c.(10oz) cooked chicken, cut into strips
1 1/3 c. French's French Fried Onions, divided
1 pkg.(12oz) frozen bell pepper strips, thawed and drained
1 (12oz) jar chicken gravy
3 T. Teriyaki sauce

   Preheat oven to 400 F. Greased 2 quart oblong baking dish. Press rice into bottom of prepared baking dish.
Combine chicken, 2/3 cup French fried onions, bell peppers, gravy and Teriyaki sauce in a large bowl. Pour
mixture over rice layer. Cover; bake 30 minutes or until heated through. Top with remaining 2/3 cup onions. Bake 1 minute or until onions are golden.

Makes 4 to 6 servings.
