LAYERED APPLE - CRANBERRY PIE

1 15oz. pkg. folded refrigerated unbaked pie-crust (2 crusts)
1 21oz. can. apple pie filling
1/2 of a 16oz. can whole cranberry sauce
   Granulated or coarse sugar

  Preheat oven to 375F. Let pie-crusts stand at room temperature for 15 minutes as directed on package.
Line a 9inch pie plate with 1 of the pie crusts; spoon in apple pie filling. Spoon the cranberry sauce over pie filling.
   Cut slits in the remaining pie crust;place on filling and seal. Crimp edge as desired, sprinkle with sugar.
  To prevent over browning, cover edge of the pie with foil. Bake in preheated oven for 25 minutes. Remove foil. Bake for 15 to 20 minutes more or until top is golden. Cool on wire rack.

Prep: 10 minutes. Bake: 40 minutes, Makes: 8 servings

OVEN BAKED BARBECUED RIBS

2 1/2 to 3 lbs. finger ribs
6 tbsp. catsup
4 tbsp. Worcestershire sauce
4 tbsp. water
4 tbsp. butter
2 tbsp. vinegar
2 tbsp. lemon juice
3 tbsp. white sugar
3 tbsp. brown sugar
2 tsp. salt
1 1/2 tsp. chili powder
2 tsp. dry mustard or regular mustard
1 tsp. paprika
1/2 tsp. red pepper

Combine all ingredients and pour over ribs in baking pan or large casserole. Bake covered at 350 degrees for 2 hours. May cut recipe in half or make more according to how many ribs you have.

CHICKEN CHILI AND BROWN RICE

1 lb. skinless, boneless chicken breasts cut into six portions
2 tbsp. oil
14 oz. chicken broth
1 sm. green pepper, chopped
1 can Mexican style tomatoes
1 3/4 c. quick cooking brown rice
Salt and pepper
1 onion, chopped
1 clove garlic
Dash of hot pepper sauce
Sliced olives
sour cream
1/2 c. shredded Jack cheese

Cook chicken in hot oil 2 minutes on each side. Remove and set aside. In same pan cook onion, pepper and garlic until tender. Stir in tomatoes and broth and uncooked rice and hot pepper and salt and pepper. Bring to boiling and remove from heat. Spoon into baking dish. Arrange chicken on top. Bake at 350 degrees for 35 minutes. Sprinkle with cheese and olives. Top with sour cream.

EASY BAKED TURKEY BREASTS

1 lb. Shady Brook Farms turkey cutlets
1/4 c. olive oil
4 lg. potatoes, peeled & cut into eighths
1 c. coarsely chopped tomatoes
1/2 tsp. black pepper
1 tsp. dried oregano leaves
6 lg. mushrooms, sliced
1 tbsp. chopped fresh parsley

Preheat oven to 350 degrees. Place turkey in oven casserole. Add olive oil, potatoes, tomatoes, pepper, oregano and mushrooms.Bake, uncovered, for 1 hour. Baste ingredients with sauce from the casserole every 20 minutes. Remove from the oven and sprinkle with parsley.

Chili & Dumplings

Prep: 25 minutes
Cook: 17 minutes
Makes: 6 servings.


   1 lb. ground chuck
   1 15oz. can red kidney beans, rinsed and drained
   1 14 1/2oz. can diced tomatoes, undrained
   1 11-1/2 oz. can tomato juice
   1/2 C. water
   4 Tbsp. chili powder
   1/2 tsp. salt
   1 7.75-oz. pkg. cheese garlic complete biscuit mix
       Snipped fresh cilantro or parsley

    In a large saucepan cook beef until brown. Drain off fat. Stir kidney beans, undrained tomatoes, tomato juice, the water, chili powder, and salt into beef in saucepan. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes.
   Meanwhile, prepare biscuit mix according to package directions. Drop biscuit dough by spoonfuls into mounds onto the simmering chili mixture. Simmer, covered, for 12 to 15 minutes or until a toothpick inserted into dumplings comes out clean. If desired, garnish with cilantro.

LAYERED TURKEY LASAGNA BAKE

6 lasagna noodles
1 lb. ground turkey
1 (16 oz.) can Hunts tomato sauce
1 (6 oz.) Hunts tomato paste
1 chopped onion
1/4 tsp. crushed garlic
1 tsp. basil leaves
1/2 tsp. oregano
1/8 tsp. pepper
1/2 c. plain yogurt
1/2 c. cottage cheese (1 1/2 %)
1/2 c. Parmesan cheese
2 (9 oz.) pkg. frozen chopped spinach, thawed & squeezed, dried
1/2 c. grated Cheddar cheese
1/2 c. mozzarella cheese


In large saucepan, cook noodles to desired doneness. Drain and rinse with hot water. Set aside. Brown turkey and onions in large skillet. Drain and stir in tomato sauce, tomato paste, basil, garlic, oregano and pepper.In medium bowl, combine cottage cheese, yogurt and Parmesan cheese. Beat until smooth. Layer bottom of 9 x 12 inch baking dish with 3 cooked noodles. Top evenly with meat sauce.
Next, spoon cottage cheese mixture over meat/sauce layer. Continue with layer of spinach. Repeat entire process. Top casserole with cheese mixture. Bake at 350 degrees for 35-40 minutes or until thoroughly heated.
